Founded in 2019, BUTAQUE—whose name is a fusion of its core menu items: burritos, tacos, and quesadillas—quickly earned a reputation for its flavorful offerings, innovative birria dishes, and vegetarian-friendly options. Together with his cousin, Chef José Soto, López designed a menu that would appeal to a wide range of customers while maintaining operational simplicity, ideal for replication through franchising.
